Ten months in, the numbers are starting to tell a clear story about what restaurants lose when the phone goes unanswered.

Independent restaurants across the UK and Ireland have now placed over 10,000 orders through the Flipdish AI Phone Agent, generating more than €270,000 in revenue that, in many cases, would simply not have been captured. Across all markets, the product has facilitated over 13,000 orders in total since its launch at Dished Live '25 in London last November.

The numbers are a milestone. But the more instructive story is what they represent at the kitchen level.

The problem the product was built around

Phone orders have never gone away. For a lot of independent restaurants, particularly during the Friday evening rush or the Sunday lunchtime crunch, the phone is still one of the busiest order channels they have. And it is also one of the most chaotic ones to manage.

Staff can only do one thing at a time. When the phone rings during a peak service window, someone has to stop what they are doing, walk to the receiver, take the order by hand, read it back to the kitchen, and then get back to whatever they were doing before. If the phone rings again thirty seconds later, that whole sequence starts again.

Flipdish data gives a precise shape to how extreme this pressure gets. Some restaurants have reported receiving more than 30 calls in a single 10-minute period. In at least three separate cases, four customers have called the same restaurant simultaneously. That is not an edge case. That is peak time, every Friday, for a lot of operators throughout the country.

When a restaurant cannot answer, most of those callers do not ring back. They order somewhere else.

What the AI Phone Agent actually does in those moments

The Flipdish AI Phone Agent answers incoming calls instantly, takes the order through a natural conversation, suggests relevant add-ons such as sides or drinks, and submits the confirmed order directly to the Flipdish POS, kitchen display screen or terminal. The front-of-house team does not need to be involved. The kitchen sees the order as if it had come through any other channel.

Crucially, the system handles concurrent calls. When four people call the same restaurant at the same time, all four calls are answered. All four orders are taken. None of them go to voicemail.

The result is captured revenue that would previously have been invisible: the calls that rang out, the customers who hung up, the orders that went to a competitor by default.

What operators are saying

For Silvio's Food Company in Dublin, the change has been most visible during the half-hour before lunch and dinner service, when inbound call volume tends to spike before staff are fully settled into their rhythm.

"Before the AI Phone Agent, calls would come in all at once before lunch or dinner and some customers would simply give up if we could not answer quickly," said Jessica Borza of Silvio's Food Company. "Now those calls are answered straight away, orders can be taken without staff running to the phone, and our team can stay focused on preparing food and serving customers. It has helped us handle busy periods more efficiently and capture orders we might otherwise have missed."

Conor McCarthy, Co-Founder and CEO at Flipdish, framed the milestone in similar terms.

"10,000 orders and €270k in revenue is a great milestone, but the real win is what it represents," he said. "Fewer missed calls, less chaos during peak service, and more orders captured without dragging staff away from the kitchen or the counter. Restaurants should not have to choose between answering the phone and looking after the customers in front of them."

What comes next

The current version of the AI Phone Agent focuses on order capture. The product roadmap extends it further. Flipdish plans to develop the agent's ability to handle a broader range of customer calls, including order amendments and queries about opening hours, so that the full scope of inbound phone contact can be managed without staff involvement.

Beyond phone, Flipdish is also building out additional AI tools across the platform, covering order generation, reduction of manual work, decision-making support, and customer relationship management.

The direction is consistent: automate the repeatable, free up the team for the work that actually requires a person.
