Tim and his business partner opened their first site at 21, in the same spot they used to eat at as kids. That full circle moment still means something to them. Ten years on, The Sauce has grown into an award-winning chicken restaurant with two London locations, a second site in Tottenham, and more stores already in the pipeline.

The menu is built around fried and grilled chicken, loaded boxes, prawns, steak and whatever else the kitchen feels like doing well. The sauces are all made in-house and have picked up their own following. They won the world's biggest chicken wings competition. The youngsters love it. So does everyone else.

The challenge

Running a food business is, as Tim puts it, a daily battle. But The Sauce was growing fast, serving a younger crowd who expected to order on their phones or at a screen without queuing at a till. Keeping up with that while managing two busy sites, controlling labour costs and getting clean data out of multiple ordering platforms was getting complicated.

The bigger frustration was the marketplaces. Uber Eats, Just Eat, Deliveroo: all taking orders, none of them sharing customer data. For a business that wanted to grow with intention, that was a real problem.

The solution

The Sauce brought in Flipdish around two years ago and built their tech stack around it. What they got was a proper one-stop shop: online ordering, self-order kiosks, marketplace aggregation pulling everything into one place, POS with staff check-in and rota management, and SMS marketing tied to customer loyalty data.

The kiosks changed how the floor operates. Staff now walk customers to the screen rather than serving them at the till, which frees up labour to focus on the food instead. Visuals and upsell prompts on the kiosk do the selling, and customers discover things on the menu they would never have spotted otherwise. As Tim says, people eat with their eyes.

On the marketing side, The Sauce uses customer mobile numbers collected through Flipdish to run targeted SMS campaigns. A weekend promotion, a buy one get one free, a free dessert with an order. Customers who didn't know the offer was running come straight back when they hear about it.

The back end gives Tim visibility across both sites in one place: live sales, reporting by channel, rota management, price and menu updates all handled without needing to call anyone.

The results

The tech stack has had a direct impact on the numbers. The Sauce puts an extra £10,000 in monthly sales down to Flipdish. Customers have become more comfortable with the kiosks over time, ordering faster and spending more. Labour costs have come down, and that saving has gone back into the product.
